Celebrate Memorial Day: Watermelon Feta & Sea Salt

Easy Watermelon and Feta Recipe

1/2 small watermelon, cut into bite-sized cubes
1 (4 ounce) container crumbled feta cheese
2 Tablespoons finely chopped mint
Sprinkling of coarse sea salt

In a small bowl, mash together the feta and mint. Top the watermelon cubes with the feta mixture. Sprinkle with sea salt. Viola!

We love this nautical inspired tableware and thought a seafood dish would just hit the spot! Bring a crab casserole in this starfish baking dish to make a splash at your next dinner party!

Oven to table rectangular milk glazed terracotta baker boasts starfish raised relief pattern.

Crab Casserole

Ingredients

* 1 (6 1/2-ounce) can crabmeat, drained
* 1 cup mayonnaise
* 1 cup soft bread crumbs, plus 1/2 cup buttered soft bread crumbs
* 3/4 cup half-and-half
* 6 hard-boiled eggs, diced
* 1 cup chopped onion
* 1/4 cup sliced stuffed green olives, plus slices for garnish
* 1/4 cup chopped fresh parsley leaves
* 3/4 teaspoon salt
* Pinch pepper
* Olive slices, for garnish

Directions

Preheat oven to 350 degrees F.

In a large bowl, break the crabmeat in chunks. Add the mayonnaise, 1 cup soft bread crumbs, half-and-half, eggs, onion, olives, parsley, salt, and pepper, and fold together. Divide the mixture among greased individual ramekins or spoon it into a 1 quart casserole dish. Top with the buttered crumbs and bake for 20 to 25 minutes. Garnish with olive slices.

Round Up Charities / May 2011

The A. Dodson’s Round Up is officially underway!

Step one, customers will be asked if they’d like to round up their purchase to the nearest dollar. Step two, Facebook fans will vote on which charity will receive the monthly collection. The three charities selected for consideration this month are:

1) The Cure Starts Now Foundation – Virginia Chapter

This charity’s mission is to raise money and awareness for pediatric brain cancer research and to help children with brain tumors and their families. Since 2008, The Cure Starts Now (CSN) has provided just under $500,000 in research funds to top facilities across the nation such as St. Jude, Cincinnati Children’s hospital and Sloan Kettering Cancer hospital. 2) Rose & Womble Foundation

This foundation focuses on:
a – Education with an annual scholarship contest awarding $10,000 and an annual back to school drive for children in need.
b – Military with an annual patriot’s day, raising money for Wounded Warrior and Gold Start Mothers of Hampton Roads in honor of those who fought so bravely for our country.
c – Hunger through numerous canned food drives throughout the year and an annual Turkey Basket Brigade feeding over 650 families a Thanksgiving dinner.

3) Sufffolk Humane Society

The Mission of the Suffolk Humane Society is to end euthanasia as a means to control pet overpopulation in Suffolk. To achieve this goal, Suffolk Humane Society is focused on Adoption, Spay/Neuter Programs, and Humane Education.
